Eat Truffles like an Italian

Ahhh truffles ... these yummy little nuggets are the star of the show, but they are bashful. To allow their subtle aroma to shine, shine, shine nobody else should be invited on stage.   If you are fortunate enough to get your hands on one of these beauties to enjoy at home, three words - keep it simple.

The Piemontese eat their truffles more or less just a few simple ways:

  • On tajarin - a golden egg yolk pasta, cut long and thin, some chefs claim their pasta is made with 40 egg yolks.  Toss it with burro di montagne (butter from the mountain) and you've got the perfect pillow for your truffle.
  • On agnolotti dal plin - tiny pinched ravioli, usually stuffed with roasted meat, are a traditional Piemontese dish served throughout the region during truffle season.
  • On Eggs en cocotte - poached eggs, intertwined with local cheese, in a cute ramekin ... then truffles.  Simply divine and proof food is an expression of our love to ourselves.

Go to Peimonte.  Find some butter.  Eat their truffles.
